5 things to do with leftover Easter eggs
Yes, you had fun dyeing those eggs with the kids, but now what? Here are some ideas to use them up. (But please don’t eat them if they’ve been in the backyard all day, especially if cracked.
1. Feed the beasts. Eggs are good for dogs and cats, and can even improve their coats. Plus, they usually gobble them down.
2. Make egg salad. Seriously, it’s so easy. Peel and chop the eggs, add mayonnaise and pickle relish and you’re done. If you’re inclined, you can also add finely diced onions and celery. It’s such a simple and cheap lunch.
3. Make chicken salad. Add your chopped eggs to the chicken or ham salad, also made with mayo, pickle relish and whatever else you feel like dicing and throwing into it!
4. Fried rice. I dice up carrots, onion and celery very fine, then add them to cooked rice with a little bit of teriyaki or soy sauce. Throw in the chopped eggs for protein and saute or stir fry the whole thing in a bit of oil. You can also use raw eggs for this, just put them into the stir fry and let them cook.
5. Use the dye. And, while you’re being thrifty, what about that leftover egg dye? You can use it to make watercolor paints for the kids or tie-dye small items. How about white socks? Use rubber bands and twist the fabric. Then dry the socks in a hot dryer or iron to heat set for the longest-lasting dye effect. A reader also suggests putting a cup of white vinegar into the wash water the first time you launder them, to help set the color.
